Broccholi Salad
Broccholi Salad

Two bunches, cut off tops into fork-size bites. You can chop some of the stalk into the pile if you want. Otherwise, use the stalks for soup. If you use more broccholi, just adjust the rest of the ingredients to match.

Rinse broccholi and pat dry. Put into a bowl.

In a small bowl, mix the following:
1C mayo
1T sugar
1/4c vinegar to dilute the mayo

Pour over the broccholi and mix. There should be enough to coat all the broccholi.

Toss in a handful or so of raisins, walnut halves and sunflower seeds. You can add more or less of any of these three depending on your preference. Mix broccholi, raisins, walnuts and sunflower seeds. Make more of the sauce as needed to coat, but not too much so the broccholi mix is setting in sauce.

Cover and put in frig for a few hours. Great with any meal. Any time of the year.

I sometimes mix regular raisins with golden raisins. Use an even mix of roasted, unsalted and salted sunflower seeds.
